In order to use non-ASCII characters, you should use combination of EncodedTextLen (tag 354) and EncodedText (tag 355), instead of Text (tag 58)

Other encoded tags are also available - if you are looking at FIX 4.2 specification, take a look at Appendix J for some examples.
